‘I love you but I’m thirsty’ is not strictly allowed to be called Muscadet as Vincent Caille has experimented by adding other grape varieties to the legally mandated Melon de Bougogne. I couldn’t care less whether it passes the appellation laws or not - it’s one of our favourite wines from the region. Light and fresh with a savoury, almost saline minerality and a touch more weight and roundness than a typical Muscadet.
